Lev’s was founded in 2006 by Lev Kilun, who immigrated from Uzbekistan in the late 80s, where he drank a lot of kvass! Lev uses a family recipe that he brought back with him from Russia, where tea culture became very popular during the Soviet era, because of a coffee shortage. His grandmother brewed it, and he used to drink her kombucha to cure his hangovers as a teenager.
Crisp, perfectly fizzy, with a nice bite is how we would describe Lev's Original kombucha. It has a softness to it, and the ginger and the berry notes tangle together beautifully in this Ginger Berry flavor. This is finely-crafted kombucha for sure.
Like many kombucha brewers, Lev started with selling it in kegs, before he moved on to bottling. Today, he brews his tasty booch in a military kitchen in Treasure Island in the San Francisco Bay. Says Lev: “The island is right in the middle of the bay, and creates the perfect scenario for us to brew kombucha here. Oxygen, fresh air and cool temperatures are pertinent to making good kombucha, and we have all of that here. We also have an excellent view."
