Creative flavoring is a hallmark of this Sacramento-based brand. Consider Red Heather. It’s got a rooibos tea base with heather, grains of paradise (which is a spice in the ginger family), chamomile, mint, vanilla and palo santo (which is added as actual pieces of wood at various times throughout the brewing process). It’s sweet and spicy, woodsy and tart, and overall very unique.
Zeal Kombucha was started by two friends—Bobby Mull (who’s been brewing kombucha for 10 years) and Zac Nelson—over three years ago and is currently available in many locations on tap in the Sacramento and Bay Areas. They also recently started selling their booch in 12oz bottles (the bottle in our photo is the one they typically sell at farmer’s markets).
Vanilla Pine is a standout flavor. It’s the first time we’ve seen actual pine used in kombucha, and one of the rare times we’ve seen vanilla as a booch flavor. The combination is unique and new. The best way we can describe it is: It tastes like the outdoors. Clean, crisp, refreshing, with a perfect carbonation. It’s more on the dry side, with a very mild sweetness and a terrific bite.
Bobby and Zac harvest their own pine needless, which is a painstaking process that yields rather delightful results. In addition, there’s also hibiscus, lavender, chamomile, ginger and vanilla. Another thing we really like about Zeal is their logo and name. We love how modern, clean and simple it is. Easy to find, and easy to remember!
