There must be something in the water of the Bay Area, because there is epic kombucha brewing in that part of the U.S. Marin Kombucha is a perfect example. It’s complex, robust, it’s brewed in oak barrels—like Rainbow Cloud, Golda, Curly Wolf, Elixirz and a small handful of other brewers. Oak barrel brewing definitely gives kombucha a rounded feel, and balances tart and sweet nicely. In the case of Marin, the brew sits on oak chips for a brief period.
The result is a flavor profile that is really unique. Pinot Sage is complex and robust. Apple Juniper tastes a bit like apple pie... with a kick! It's light and crisp. And both are super low sugar: just 4 grams per 16oz bottle.
Fun fact about Marin: Its founder, Brian Igersheim is a former biologist and chemist, who spent over 7 years in the food and beverage industry (five years of it as the director of agriculture at a Maui pineapple company!) He began home-brewing in 2013 after purchasing a scoby off of Craigslist!
